Grease a 23 x 33cm tray and set your oven to 180°
Chop all of your dark chocolate into fine pieces and place in a heat proof bowl with 30g of your coco powder and expresso powder.
Melt your butter until its at a gentle simmer and then pour over your chopped chocolate, coco and expresso powder. Leave to stand for a few minutes and then mix together.
Chop your milk chocolate intop chunks and set aside for later
Put your eggs, granulated sugar, dark brown sugar, salt, and vanilla extract into a bowl and mix with either an electric mixer or stand mixer for 10 minutes.
Sift and gently fold in your flour and, chunks of chopped milk chocolate, and remaining coco powder (70g)... be careful not to overmix and knock out all the air!
Pour your mix into your greased tray.
Place in the oven for 22 minutes and then take out and turn it around and place in for another 22 minutes.
Top tips: Place a toothpick into the brownie halfway between edge and centre. A toothpick covered in brownie batter means a wet batter and will need to bake a bit longer. Moist crumbs on the toothpick is what you want to see.
Resist the urge to dig into the chocolatey goodness as soon as they're ready, the longer you leave them to cool the richer and fudgier they will taste.
