Creamy Chicken Pasta Soup

Ever crave something that's both a comforting soup and a hearty pasta dish? Meet my creamy chicken pasta soup—a bowl of cosy goodness that checks all the boxes.

It is perfect for chilly Autumn and Winter days or just a lazy Sunday when you need a little warm pick-me-up.


I don't know if it's just me, but soup alone usually leaves me feeling hungry about an hour later, so that is what's so perfect about this recipe - it has the cosy warmth of soup but with the heartiness of pasta to keep you satisfied for longer.


It's simple to make but packed with flavour.

Instructions


  • Set your oven to 190 for your chicken

  • Season your chicken breasts with some salt and pepper and put in the oven for about 25 minutes

  • Chop all your veg

  • Put your butter and olive oil into a pan together and wait until your butter melts.

  • Add in all your veg and saute for a few minutes

  • Add in your garlic and seasonings

  • Now, you can add 800ml of chicken stock and water or Chicken broth, whichever you prefer, and bring to the boil.

  • Once your chicken is ready, you can shred it - shredded tastes much nicer through the soup than chopped, in my opinion, but either way will be fine

  • Add your chicken to the pan, turn the soup to a gentle simmer, and leave for about 15 minutes.

  • Then add in your pasta (if it looks like you need a little more water, then just play it by ear)

  • Add in your creme fraiche, stir - and serve


Top tips.


  • Unless you are eating your soup as soon as it's ready, I would take it off the heat a couple of minutes before the pasta is thoroughly cooked, as the pasta will continue to soften while the soup is cooling- and nobody likes soggy pasta


  • For some extra flavour, add some grated parmesan cheese once it's in the bowl before you serve.


  • If you can seriously use fresh thyme for this recipe, it packs a punch in taste.


  • One way to make this taste even better is to make some homemade bread to dip into it.
